IN THE SPOTLIGHT THIS MONTH: STRONG SPINACH
Our spinach comes from the Van den Eijnden family. They invest in nutritious and fertile soil through regular crop rotation and provide more space for their vegetables, making sure that the leaves on your plate taste extra crunchy and firm. Spinach is a highly versatile vegetable and an excellent source of folic acid, Vitamin A, K, B1 and potassium, especially when raw. Great for your eyes and bones, it helps against fatigue and supports the proper functioning of the nervous system. In company restaurant Fields we will be using this super vegetable a lot in June!
JUNE 15: HERRING DAY
Our herring is supplied by SmitVis and comes from Sligro. Good ‘matjes herring’ (young herring) has fairly white meat, a fresh, salty smell and a creamy taste. The meat is tender but firm. Sligro’s matjes herring comes from the northern North Sea, between Scotland and southern Norway. This area is home to plenty of plankton on which the herring can feast until they are nice and fat, worthy of the name matjes herring. Only herring with a minimum of 16% fat and gutted, salted and filleted in the traditional Dutch way may carry that name. The season of the ‘Hollandse Nieuwe’ runs until the end of July, but of course herring is available all year round. The frozen whole fish can be thawed when needed and processed into fresh consumption herring. There’s plenty of time to enjoy it: on its own or in a bun, with onion or pickles, how do you prefer your matjes herring?
JUNE 29: DISCOVER THE AFGHAN KITCHEN
Every month we cross borders in the company restaurant Fields. This month our chefs are taking you with them on their journey to Afghanistan. This cuisine is unexplored by most and is full of spicy and sweet flavours. Hutten’s top chef Erwin Kwakernaak has developed an Afghan aubergine salad, a special macaroni dish and bolani, a snack made with potato and spring onions. Come and try it yourself!
COFFEE OF THE MONTH: CAFÉ AFFOGATO
This month’s special is where coffee meets ice cream. Affogato means ‘drowned’ in Italian and this special is actually a coffee-based dessert. Our baristas take a scoop of vanilla ice cream and drown it with a shot of hot espresso. Hmm… Come and taste it at espresso bar Mill’s!
